A great way to get your veggies in, pav bhaji is a delicious street food from Mumbai! It is eaten with toasted buttered buns.
Main dish for: 3 people. Prep Time: 20 minutes. Cook Time: 40 minutes. Note: pay attention to whether recipe asks for seeds, powder, or leaves – it matters.
Ingredients:
- 2 tbsp oil
- 1/2 onion, chopped
- 1/2 inch ginger, chopped
- 1 green chili, chopped
- 1 bell pepper, bell pepper
- 1/2 cup frozen peas
- 1/3 cup cauliflower
- 1/3 cup carrots, chopped
- ?? dhaniya powder
- ?? pav bhaji masala
- ?? coriander leaves
- 1 tbsp butter
- 1/2 cup diced tomatoes
- ?? potatoes (boiled and mashed)
- ?? water
- 6 buns, nicely toasted
The Process:
- Chop your ginger, green chili, and onion. Heat the oil in a wok and put the ginger and green chili in first.


2. After a bit of time, put the chopped onions in.


3. After the onions are more pink in color, chop the bell pepper and put that in the wok.


4. While the onions and bell peppers are cooking, prepare the peas and chop the cauliflower and carrots.


5. First let the peas defrost a bit in the wok. Then put the cauliflower and carrots. We want to make sure we are dealing with as less water as needed so that it sautés well 🙂


6. Next, put in the dhaniya powder and pav bhaji masala. Mix that in well.


7. Then stir in the fresh dhaniya (coriander) leaves.


8. You can put in the butter after the dhaniya leaves are mixed in. Next, add the tomatoes.


9. Let the tomatoes sauté for a bit in the veggie mix and become less watery. Finally, add the boiled potatoes.


10. Lastly add water to all of this so that it becomes “goopy” in texture. Don’t overwater the bhaji though.


11. Toast some mini slider rolls (pav) on the side. Butter it nicely for the best experience! Serve in a plate and top the bhaji with butter too.
