Okra with sautéed onions, tomatoes, and Indian spices!
Side dish for: 4-5 people. Prep Time: 20 minutes. Cook Time: 30 minutes. Note: pay attention to whether recipe asks for seeds, powder, or leaves – it matters.
Ingredients:
- 2 lbs chopped bhindi (okra)
- 2 tbsp mustard oil
- 1/2 onion, chopped
- 2 cloves garlic
- 1/2 inch ginger
- 2 tomatoes
- 2 red chillies
- 1/2 teaspoon dhaniya powder (coriander)
- 1/2 teaspoon haldi powder (turmeric)
- 1/2 teaspoon amchur powder (dried mango)
- salt to taste
The Process:
1. Put 1 tbsp of the oil, chopped bhindi, and red chillies in the heated wok.
2. In a separate heated pan, add the other 1 tbsp oil, onion, garlic, and ginger.
3. Keep mixing the bhindi and the onion mixture separately.
4. Once the onions are translucent, add the tomatoes and sauteé further. Keep stirring the bhindi as well.
5. Once most of the water from the tomatoes escapes, add dhaniya, haldi, and amchur. Stir for a little bit, and add the onion-tomato mix into the bhindi. Add salt and serve hot, enjoy!
