Boondi Raita

Boondi Raita is a quick way to spice and crunch up your every day yogurt! Boondi is a deep fried Indian snack made of gram flour in the shape and size of petite peas. Raita (spiced smooth yogurt) has either boondi or finely diced tomato, cucumber, and onions (if you’re feeling healthier/want to switch it up)!

Side dish for: 3-4 people. Prep Time: 5 minutes. Note: pay attention to whether recipe asks for seeds, powder, or leaves – it matters.

Ingredients:

  • 2 cups plain yogurt, whisked
  • 1 cup boondi (fried gram flour balls)
  • handful fresh coriander, finely chopped
  • 1/4 tsp kala namak (Himalayan black salt)
  • 1/2 tsp cumin powder (jeera)
  • 1/4 tsp chili powder
  • 1/4 tsp dhaniya powder (coriander)
  • to taste: regular salt and/or sugar

The Process:

1. Whisk the yogurt so that it is smooth with minimal lumps.

2. Add the kala namak, jeera powder, dhaniya powder, chili powder and fresh dhaniya and stir well.

3. Mix in the boondi (or diced tomato, cucumber, and onions, if you choose). You can now add regular salt, kala namak or any of the other spices included earlier, as needed, to taste. If you prefer sweeter yogurt, add some sugar. Garnish with additional fresh coriander and enjoy!
